The manufacturing window is concise. Like other Japanese teas, the tea leaves intended for matcha are first steamed. The leaves are treated immediately with steam heat within hours of being plucked to stop the oxidation process and intensify the green hue of the shade-grown tea leaves. The act of steaming produces a taste profile that is typically described as sweet and vegetal. Instead of being rolled, molded, and dried like typical green tea leaves, matcha leaves are put flat to dry and form tencha, the leaves from which matcha is manufactured.

The stems and veins are then removed from the tencha leaves. The leftover leaf material is pulverized in stone mills that rotate slowly, producing a fine green tea powder. Traditional tea leaves are soaked in hot water to extract the taste and chemical components of the tea leaves into a consumed brewed tea. The matcha green tea powder is stirred into hot water, and the suspended ground tea leaf material is eaten with each drink.
