Potato starch exists as semi-crystalline granules composed of two structural forms, long amylose and amylopectin chain lengths. When starch granules are exposed to certain moisture and heat, the granules form crystalline structures, swell and get softer and lose their shape, in a process called gelatinization. Moreover, when granules are burst, the molecules break down and surround water to form a thick mixture. Sometimes mixture becomes thicker and even rubbery when kept in the cooler temperature.
