Any sugar that can act as a reducing agent is a reducing sugar. In an alkaline solution, a reducing sugar produces aldehyde or ketone, allowing it to function as a reducing agent, such as in Benedict's reagent. In this process, the sugar is transformed into a carboxylic acid. All monosaccharides, some disaccharides, some oligosaccharides, and some polysaccharides are reducing sugars.

There are two kinds of monosaccharides: aldoses, which have an aldehyde group, and ketoses, which contain a ketone group. Before functioning as reducing sugars, ketoses must undergo tautomerization into aldoses. All of the commonly consumed monosaccharides galactose, glucose, and fructose are reducing sugars. Two monosaccharides combine to generate disaccharides, which can be either reducing or nonreducing.

Nonreducible disaccharides, such as sucrose and trehalose, contain glycosidic linkages between their anomeric carbons and are hence incapable of converting to an open-chain form with an aldehyde group; they are trapped in the cyclic form. One of the two anomeric carbons of reducing disaccharides like lactose and maltose is engaged in the glycosidic bond, while the other is free and can transform into an open-chain form with an aldehyde group.
