The malted milk market was valued at $1,926.5 million in 2022 and is estimated to reach $3,318.7 million by 2032, exhibiting a CAGR of 5.8% from 2023 to 2032. Malt is a broad category of processed cereals that comes in a variety of market-specific varieties, including malt for brewers and beers (which includes both standard and specialty malts), malt for distilling, and malt for culinary uses.

Malts are widely accepted in food and beverages application owing to their functional properties. Specialty malts, as much as 25% of its total volume production are used to deliver flavor, color and functionality to a wide range of food products including baked goods, bars, cereal, cookies, crackers, granola, gravies, roux, prepared food, pet food, snack food and many more. For instance, the color of dark roasted malts is much more intense and soluble with 70% of the flour solubilized. Dark roasted malt flours provide a source of fine, dispersed dark flour containing large amounts of soluble color. They work well in dark bread, cookie and cake mixes, as well as baked and extruded pet food applications. Hence, malt as flavoring agent or coloring agent in the food industry, helps drive the demand for the product in the global market. Malt may uncommonly induce symptoms of food allergy in sensitized individuals, including Baker's asthma, urticaria, facial itching, Quincke edema, systemic symptoms and anaphylaxis. This patient experienced type I hypersensitivity to corn and barley/malt. She also exhibited IgE reactivity to wheat and other grains, but neither of these foods produced any symptoms when she ate them, suggesting that she may have latent sensitization to them.
